It is very important to note that at this great American feast the variety and range of food and flavors is the widest that we enjoy all year. Think about it, traditionally each aunt, uncle, brother, sister, invited guest, in law, relative and friend bring their special dish. This can be candied yams, jello surprise, green bean casserole [nobody does it like Aunt Betty], mixed veggies, etc. to accompany the untouchable “BIRD”. No one messes with “Mama” or that tradition.
Understand you have more flavors on your plate that both compliment each other and compete against one another. So there is not a wine that pairs perfectly with all of those flavors except perhaps champagne. We usually focus on the turkey as the prominent flavor we try to compliment. My personal favorites are Zinfandel, Cabernet Sauvignon, Pinot Noir and Gewürztraminer or Riesling.
